It's been exciting to have had interest from so many people about the project, including from the press. Here are some links to interviews and articles about the project.
The Staff Canteen. 13 February.
"Dan Doherty spoke to The Staff Canteen ahead of the event: “For me it’s important to not get caught up in the structure of the menu. I think having a diverse menu like that just reinforces the dishes that they want to do.”"
Big Hospitality. 9 February.
Dan spoke to Big Hospitality about the industry and how he hopes CoT will give "experience and recognition within realistic frameworks."
The Guardian - Jay Rayner. 8 February.
Jay mentions us in his final points, at the bottom of a great review about a restaurant in Lyon.
The Staff Canteen. 5 November.
Dan spoke to Staff Canteen about the beginnings of the project.
